Winter is coming – time to start slow-cooking

Nothing is worse than coming home to an empty fridge, no leftovers and ‘hangry’ kids, adults, grandparents – the whole bunch is just not happy.

Before the snow puts a damper on your mood, your travel plans, your utility bill (Canadian winters, am I right?) Here are some slow-cooker meals you can prepare for when those gloomy winter days are blessed upon us.

Best part? The lucky ones who are waiting at home for dinner to be made can help out!

Let’s get started.

First off, we have a soup that is basically a deconstructed chicken taco. What could be better? I remember my mom basically throwing every food item in the pantry into the slow-cooker/crockpot just to see what happens.

Since I do not want to leave you astray with my moms “let’s see what happens” narrative, I found an awesome recipe to follow along from delish.com that overall captures the heart of my mothers taco soup.

 

 

QUICK TIP: If you have younger kids but still need the toppings to be prepared but do not trust them with knives, cooking oil or stovetops (good parenting!), get the kids to take the tortilla chips onto a cutting board and break them off (using their little hands) into smaller pieces. Let them sprinkle the chips onto everyone’s soup as an extra step for the tiny cook!

Another recipe that comes to the top of my head is a classic pasta dish full of cheese, cheese and more cheese. This is another dish that is dear to my heart and my stomach.

Literally my favourite dish as a child and now as an adult. I have no shame ordering a mac & cheese dish on a night out or for a take-out dinner at home. 

This recipe provided by spruceeats.com comes with 1.. or wait 2.. nope, 3 different types of cheese as well as 2 seasoning powders most likely accumulating dust in your spice cupboard.

 

 

QUICK TIP: Season your breadcrumbs before it goes on top of your pasta! This is something the kids can do with just some salt and pepper. By the time you get home, the breadcrumbs are prepared and ready for a quick toss in the pan for some crisp and colour.

The only way my mom could get me to eat vegetables was by sneaking it into other dishes which she managed to do without my knowledge. One of those dishes was a classic Beef & Broccoli dish. All of the salty and garlic-y parts of the meal made me chow down like it was my last meal on Earth. 

I found this recipe on Facebook from a website called tasty.com. According to this particular recipe, 98% of the people who have made this meal would recommend it and also recreate it for themselves. Well, I’m sold!

 

 

QUICK TIP: Make this recipe onto of a bed of jasmine rice, white rice, brown rice, it is up to you! As well, consumers are recommending that you marinate the beef before it goes into the crockpot/slow-cooker. Ingredients such as lemon juice and a little bit of soya sauce can go a long way in this recipe. This recipe may not call for the kids to help but we do guarantee that they will dive into this dish without the fear of broccoli on their mind.
